This street food named kaalan is so tasty and healthy. It is more popular in Tamilnadu . Now a days we malayalees are also becoming very fond of it because of its delightful taste. The main ingredients used here are mushroom, cabbage and cauliflower which are high in nutritional values . The children are very attracted to it because of its chinese style .
Cauliflower - 250 gms
Cabbage - 250 gms
Mushroom - 250 gms
Onion - 2
Tomato - 1
Soya sauce - 1 tsp
Tomato sauce - 3 tsp
Corn flour - 3 tbsp
Maida - 2 tbsp
Ginger garlic paste - 2 tbsp
Chilly powder - 3 tsp
Corriander powder - 1 tsp
Turmeric powder - 1 tsp
Garam masala - 2 tsp
Corn flakes - 1 cup
Oil - to fry
Salt - As needed
Water - As needed
Corriander leaves and curry leaves - For garnishing
At first chop mushroom , cabbage , cauliflower and keep it aside , Heat a pan and boil some water . Put chopped mushroom in it also add a pinch of turmeric powder to it . Close the lid and keep it for few minutes . Do the same process for cauliflower also . This is to destroy germs and small worms present in it .
Now drain mushroom and cauluflower and also add washed cabbage and mix well .
Add 2 tsp of chilly powder and 1 tsp of garam masala , 1/2 tsp of turmeric powder . 1 tsp of ginger garlic paste and also the needed salt to it and mix them well . Add 2 tbsp of corn flour and maida to it and also add the necessary water to it , to make a thick consistency . Let it rest it for few minutes .
Now heat a pan . Pour some oil . Fry the mixture by shredding it in the oil. Make a deep fry of it . Keep it aside after frying the whole mixture .
Heat a pan and add 2 tbsp of oil . Add 1 onion ( chopped ) into it . Saute it well till it is golden brown . Now add chopped tomato to it , also add ginger garlic paste and saute it well . When it is finely cooked add rest of chilly powder , corriander powder , turmeric powder , garam masala , salt and saute it well .
Now add tomato sauce , soya sauce and saute well . Add 1/2 cup of water to it . Let it boil for few minutes . Add the corn flour slurry ( a mixture of 1 tbsp of corn flour with 1/2 glass of water ) to it .
When the gravy thickens you can add 2 eggs (optional ) to it and mix well . To this thick gravy add the fried mixture and mix well , till it gets finely blended with the masala .
Now switch off the stove and add corn flakes , chopped onion , corriander leaves and mix them well .
The tasty kaalan is ready to eat . Always serve it hot to get the full delicacy .
