How to make Malabar style Erachi choru

Malabar style Erachi Choru

 

This erachi choru is one of the best receipe in non-vegetariandish.here I have used beef to make this preparation.we can either use mutton or chicken for this dish.The method is very simple but very delicious than other briyanis.

 

INGREDIENTS

  1. Beef - 750 gms

  2. Water - half cup

  3. Corriander powder - 2 tbsp

  4. Pepper powder - 1 tbsp

  5. Turmeric powder - half tsp

  6. Garam masala -1 tsp

  7. salt - accordingly

  8. onion - 2 big

  9. Ginger garlic paste - 2 tbsp

  10. Green chillies - 5-7

  11. Tomato -4

  12. Corriander leaves - half cup

  13. Mint leaves - (optional)

 

FOR RICE

  1. Basmati rice or kaima rice - 2 1/2 cups

  2. Water - 5 cups

  3. Cardamom - 6

  4. Clove - 4

  5. Cinnamon - 3

  6. Bay leaf - 3

  7. Salt -  as needed

  8. Turmeric powder-  half tsp

 

METHOD OF PREPARATION

 

First wash the beef thoroughly and let all the water get drained.For marination add corriander powder,pepper powder,turmeric powder,garam masala and salt .Mix well and set aside for 25 to 30 minutes. After 30 minutes of marination transfer it to a prerssure cooker. Cook in a low - medium flame for 15 to 20 minutes.Cooking time of beef varies accordingly.Cook it until it becomes soft.

Now its time to prepare masala for beef.heat the pan and put some oil, add the sliced onion,green chillies and.also add ginger garlic paste and saute well.Once the colour of onion turns slight brownish ,add the tomatoes and saute them well.Now add the corriander and mint leaves.Close the lid and cook it for 4 - 5 minutes.When the tomatoes are cooked well add the cooked beef to it and mix well.Close the lid and cook it for another 3 to 4 minutes.Cook it till the gravy gets thickened and dont let it get dried. There should be some gravy to mix it with the rice.After the gravy gets thickened keep it aside.Now beef masala is ready.

Next step is to prepare the rice. Wash the rice well and soak it for 30 minutes.After 30 minutes, place the rice in a strainer and discard the water..Place the pan on the stove and add double the water of that of rice.Add the whole spices and turmeric powder to the water.Dont forget to add salt to it.Close the lid and let it boil .

When the water boils add rice to it.Mix well and close the lid and put in a medium flame. Inbetween open the lid and mix well.Open the lid and see whether the rice has cooked.After 2 minutes add the beef masala to it and gently stir to mix beef and rice together.Always take care to mix gently.

After mixing them wellclose the lid and cook for another 5 minutes on a low flame.Now heat a pan and add 2 tsp of ghee and also add sliced onionto it.fry it till it is golden brown.Also fry cashews and raisins.Add this to the mixed rice for garnishing.Now you can transfer it to the serving plate.

Now hot and tasty erachi choru is ready to eat.
